Zucchini & Onion in a Thyme Flavoured Pie Crust (makes 2) Zucchini & Onion in a Thyme Flavoured Pie Crust (makes 2) Ingredients for a double Pie Crust:

2 cups of flour (more for dusting) 1 tsp salt 1 tbsp dried Thyme (or more if desired) 1 cup Shortening (if using lard ¾ cup) 1 egg 1 tbsp vinegar 4 tbsp cold water In a large bowl whisk together the flour, salt, and thyme. Add Shortening (or lard) by spoonfuls. Using a pastry blender, incorporate the Shortening until the mixture resembles small peas. In a separate bowl mix together the egg, vinegar, and cold water, add to flour. With a fork, gather into a ball. (If you find the mixture too dry, add cold water a tablespoon at a time.)
