This is a beautiful recipe you can use whatever cheese you wish I used Stichelton as I managed to get hold of it and its a favourite of ours but expensive, the original recipe suggests Parmesan and also some dry sherry or white white, you can find the Original at Whole Foods Marketfollow, where I purchased my mushrooms, cheese and shallots.

I made 4 individual tarts using half the ingredients, I will be making a large one next time as it really is very tasty. Wild Mushroom Tart Need

Olive oil cooking spray 1 (9-inch) frozen pie crust, thawed for about 10 to 15 minutes 100g Stichelton Cheese 2 tablespoons butter 2 tablespoons olive oil 1 cup thinly sliced shallots 350g mixed wild mushrooms, roughly chopped Salt and pepper to taste 4 floz vegetable or low-sodium chicken broth 4 floz crème fraîche
