When Easter rolls around, it’s almost compulsory for me to bake something with mini eggs. This year I’ve gone for triple chocolate brownies using a mixture of dark, white and sea salt milk chocolate, with a whole bag of mini eggs thrown in for good measure. These are really beautiful brownies. The bitter dark chocolate and savoury sea salt flavours bring out a unique taste and the chunks of white chocolate and mini eggs are a luscious contrast to the soft brownie mix.
