You will need..



Whipping cream

Dark Chocolate drops/chips

Wooden skewers

A jar (for the marinade)

Pastry brush


and for the marinade…

2 tbsp of Balsamic vinegar

1 tbsp of brown sugar

1 tsp of good quality vanilla extract


1. First of all you will need to prepare a marinade, basically just put all the ingredients in the jar and then give it a good shake -with the lid securely on, of course!

2. After washing and hulling the strawberries put them on the wooden skewers as you would with a kebab.

3. Brush on the marinade and leave for half an hour.

4. While waiting, whip the cream and then break up the meringue into it. I used ready made meringue from Waitrose but if you are handier in the kitchen than me, then obviously you can make your own if you wish
