For today’s August Break prompt – Taste – I’m sharing a photo of my breakfast-that-was-really-lunch-because-I-ate-at-1pm. I’ve been making this simple breakfast of sauteed greens and fried eggs since I saw it in Mariel Hemingway’s Healthy Living from the Inside Out five or six years ago. I almost always have spinach on hand, and thanks to my dad, farm fresh eggs. With a side of buttered toast, this makes a perfect breakfast, lunch, or quick and easy dinner.
