Stuffed Tomatoes

Until recently I would have said that I wasn’t a fan of stuffed vegetables – I sometimes found them a little bland, but then I made stuffed aubergine and loved it, and now I’ve made stuffed tomatoes and am just as happy.   The key to this dish is to treat it as a side dish.   I served the tomatoes with pan-fried sea bass, and they were delicious together.   I think if I was making it as a main dish, the tomatoes might need something extra adding, maybe some cheese or sausage.
