Did you know that it’s national vegetarian week this week? I think that this salad is the perfect salad to celebrate all things veggie.
When I was a teenager I tried to be a vegetarian – for all of two weeks. But I had the mistaken idea that it involved eating lots and lots of soya meat products. Needless to say they tasted terrible. Many years later I realise that being vegetarian doesn’t mean compromising on flavour. Not at all. And this salad proves it.
