Rose Petal Eclairs with Chantilly Cream

I could never fall out of love with chocolate, but seriously, these eclairs are delicious! Rose water is such an under appreciated cooking ingredient, I’m so glad that it tastes at it’s best in this recipe. CHOUX PASTRY BUNS

100g butter 300ml water 200g plain flour 3 eggs lightly beaten

CHANTILLY CREAM

500ml double cream 160ml milk 65g caster sugar 1 tsp vanilla extract

ROSEWATER ICING

2 cups (300g) icing sugar mixture

10g butter, softened

1 tsp rosewater essence

1 tbs milk

TO DECORATE

1 small jar of edible small red rose petals
