As I mentioned at the weekend, I’m embarking on a diet with WeightWatchers ProPoints. One of the goodies I was sent was the WeightWatchers ‘Members Favourites’ cookbook so I decided to dive right in and start with the cake section. This is exactly the kind of approach that caused me to need WeightWatchers in the first place but luckily all the recipes in the book are healthy versions and they’ve even worked out the points for me so I can bung it straight into my handy iPhone app. Yey!
I went for Carrot and Walnut Cupcakes. It’s the first time I’ve baked with wholemeal flour and they went down very well with the family so I thought I’d share it with you. I adapted it slightly as the recipe is for a loaf cake and I decided to make cupcakes instead. The recipe made 15 cupcakes which I’ve calculated as 4 ProPoints each.
