Preheat the oven to 220C. Wash the chicken well and get rid of all the bit that you don't need like the end of the chicken wings and legs. Dry it after with kitchen paper inside and out. Place the chicken in a roasting tin. In a bowl soften the butter with a fork and mix in the Thai spices and salt and pepper. Butter the chicken all over with the butter and herb mixture inside and out and place the lemon pieces inside the body of the chicken. Pour the wine all over the chicken.
