This is a variation on our favourite family soup recipe. Instead of barley & potato it has orzo & spinach plus a dash of lemon. It is delicious and has now become the soup I crave above all others. Orzo is small grain sized short cut pasta. The word Orzo is actually Italian for ‘barley’. It’s perfect accompaniment for soups, but can also be used in salads and in casseroles. It is completely yummy. The lemon is really yummy in this soup and I love it really tangy. The boys prefer a little lest zest. So here is is, my lemon & orzo chicken soup.
