Cheesecake is a real favourite in our home, my boys really love it.
This version is a real summery treat. The lavender and lemon are a wonderful combination, and there’s a touch of vanilla too – delicious!
250g Lavender shortbread biscuits (for details see my recipe here).
2 tbsp lavender sugar
600g Full-fat cream cheese
1 lemon zest
1 vanilla pod
600ml double cream
75g icing sugar
