Ice Cream Cake

It was Betsy's 17th birthday yesterday, and I thought seeing as she is an Ice Cream fiend, I would attempt to make a cake with it. And it was really easy, and very delicious indeed.

Basically just pick your favourite ice cream flavours, and squish them into layers in a cake tin, and leave to take shape in the freezer for a few hours. The only thing you need to do is work FAST - ice cream cannot be re-frozen, so I worked quickly, and popped it back in the freezer for half an hour between layers. I also recommend the use of a spring clip cake tin, makes it much easier to get out of the tin at the end!
