I left getting my lemons for pancake day, until the Tuesday afternoon, by then the only lemons left were in a pack of six. I used two of them for the pancakes, but the rest have been hanging around my fruit bowl waiting for me to make a lemon cake. On Friday I had a sudden though… lemon curd, so looked up a recipe I had used a few years ago and thankfully I had everything I needed.

I found an old jar of honey, gave it a good wash and then filled the jar and lid with boiling water, left it to stand for a while, then I emptied the water out and left them to air dry, while I made the curd.
