I love fish and I try to cook it as often as I can, but I will admit I should cook with it more often. So last week I thought I’d make some homemade fish cakes, as the shop bought variety always go down well. I decided to use haddock, as it has a bit more flavor than cod, but any white fish or salmon would work well. I bought frozen fish and defrosted it, as it was better value for money. I have been growing parsley from seed for about a month now and it is finally tall enough to pick, so I used freshly grown parsley, straight from the my greenhouse in the recipe.
