Yesterday was Libby's second birthday. I can't believe where the last two years have gone and I'm so proud of the lovely little girl she has grown into.
The last few days have been really busy with the new baby, a trip to Swansea, a wedding, a job assessment for me and a hospital appointment for Libby. As you can imagine, this didn't leave much time for baking, so I unashamedly cheated when it came to Libby's birthday cake.
I had intended to bake a train cake, and popped over to chat to my sister about it while she was home because I knew that they had a nice recipe book with novelty cakes in. Unfortunately, there wasn't a train in there, so Emma came up with the idea of making a train out of Swiss rolls.
