I love pancakes so when I found a gluten free option on the menu at the ‘The Bicycle Café’ in Flesherton Ontario I had to try them – Pumpkin Oatmeal Pancakes. The flavour and texture were wonderful. The flavour was that of a savory pumpkin pie and the texture was warm, dense and nutty. In the recipe that I have created, I have used pumpkin pie spices with the addition of ginger. The nutty crunchy texture is created by toasting the oatmeal in coconut oil. You will need to cook these on a lower heat than regular pancakes to prevent burning. They are rich and moist.
