Egg Fettuccine (This makes enough for 3 adults, at the bottom of the page I will add the amounts for making more, I’ve tried doubling but you have to play with the ingredients).
Ingredients for Fettuccine noodles:
3½ ounces flour + one tablespoon 1 egg 1 teaspoon of olive oil, more if necessary mix egg and olive oil together before adding to flour
Using my KitchenAid stand mixer, add flour and the egg mixed with olive oil and pulse until it resembles little peas. Test whether it is ready by putting some between your fingers and if it sticks take out of mixer, form a ball and knead 4 or 5 times, else add a little bit more of olive oil, mix, test, knead. Roll in a ball, place under a glass bowl and let rest for about 20 minutes.
