Then came the starters. First up Kombu cured salmon with bonito flake broth and pickled vegetables. The broth and fish were on the edge of being too salty but when combined with the sweet vegetables the dish was excellent. Next up came the fricasse of lamb, deep fried sweetbreads, red pepper sauce. Delicious, melt in the mouth lamb in a lovely rich sauce with some crispy sweetbreads on the side.  Now sweetbreads aren’t for everyone but I can happily report that yours truly devoured them.  I may also have snaffled a few from other diners. With their permission obviously.
