We had a friend to tea yesterday, one who’d never visited us before – it was a spur of the moment thing, I’d dashed home from work, grabbed the kids and seemed to gather another one on the way home. I did know from an earlier conversation that said friend had never really cooked at home with anyone. When I offered the chance of cooking the friend nearly burst – so I wanted to make something that was quick, easy and hands on. These Smartie Cookies are pretty much the easiest cookie that we make – and I am fond of a cookie (gooey in the middle) as opposed to the more ‘crisp’ biscuit. They’re also egg free.

They don’t have to contain Smarties – any form of chopped up chocolate, cherries, raisins, jelly sweets – whatever you’ve got going really – you just need 85-100g of them.

The recipe is simple and makes about 14 cookies – you need to preheat your oven to 180C (160C Fan), Gas 4
