Don’t let the pretty pictures fool you, these muffins tasted terrible! But can you help? I picked up a recipe from a local super market. I tweaked it just a little replacing the apple with pear. I think that was my first mistake.

I thought the idea of ‘Pear & Walnut’ muffins with a cream cheese and crystallised ginger topping sounded yummy.

The problems? Tasteless & bland, not even sweet! Not a hint of pear! The mixture was very sloppy, and after being baked really stuck to the paper cases. My cream cheese frosting split, lumpy and not smooth.

Can you figure out what I did wrong?

250g Self Raising Flower

100g Butter (50g for cakes, 50g for icing)

4 Coarsely grated apples, I used pears

75g coarsely chopped walnuts

125g light brown sugar

1 large egg

1/2 tsp vanilla extract

100ml semi-skimmed milk

100g soft cheese

100g icing sugar

1/2 tsp ground cinnamon

Crystallised ginger

I followed the instructions exactly, though I did change the way I made the cream cheese frosting as my first attempt at making it was even worse then the second.
