Chicken and Pepper Spaghetti

Chicken and Pepper Spaghetti It feels like ages since I last did a food post on here, but this recipe has been a bit of a winner for us of late. The Toddler is going through one of those fun faddish stages where the only pasta he will eat is spaghetti. In a way, this is fine, I like spaghetti, but on the other hand there is only so much bolognese a woman can eat before she starts to grow a little tired of it (ok, a lot tired of it). This recipe is an amalgamation of a few I saw in recipe books but is changed to suit us, hopefully it will suit you too! This recipe is for two adults and one small person.

Ingredients:

Spaghetti

Bread to make bread crumbs with

Chicken (anything with no bones, I prefer thighs though) cut into the kind of size your child can grab

1 Red pepper, chopped

1 or 2 Cloves garlic

Decent sized sprinkle of dried mixed herbs

A handful of fresh parsley

Parmesan

Olive oil
