Recently, I’ve been slightly obsessed with my new stand mixer and used every excuse possible to sneak into the kitchen and bake something. In the past, I have mainly focused on sweet bakes such as cupcakes or tray bakes, but today I wanted to try something new. I had been playing with the idea of baking bread or bread rolls for a while, but could never be bothered with all the kneading. Now that I have a new mixer, I don’t have to worry about tedious kneading anymore, so this afternoon, I bit the bullet and decided to make some bread rolls with a bit of a twist – a basil and red pepper pesto filling, making them savoury pesto bread rolls.
The rolls turned out really lovely despite me not following a recipe, so I can definitely see me making them again. Amy and I shared one of each and the pesto is a really lovely addition to the bread roll that makes it a little more interesting in terms of flavour. I think they’d be great for a BBQ
