Banana and Date Suet Pudding


150g (5oz) self-raising flour pinch of salt 50g (2oz) caster sugar 50g (2oz) suet 1 egg 150 ml (¼ pt) milk 25g (1oz) chopped dates Slices of banana

Toffee Sauce

500ml/18fl oz double cream 175g/6oz demerara sugar 175g/6oz butter 1 tbsp golden syrup


Make the toffee sauce, add all to a pan and cook until sugar has dissolved and is thickening up Set to one side to cool Whilst cooling, Add all ingredients except banana in a bowl and mix until a soft drop mixture Place some toffee sauce into the bottom of your dishes Add sliced bananas Place mixture into your dishes Cover with grease proof paper and tie Place your bowl/s into a Bain Marie (roasting tin with water in) Steam gas mark 4 for 35 minutes. Remove and serve with cream or ice-cream and added toffee sauce.
