I hate throwing food away and today I found myself with half a dozen bananas that were well past their best so some routing through cookery books inspired me to try combining a couple of recipes to make Banana & Chocolate Chip Muffins. They have turned out really well and have a different method to normal cakes so I thought I’d share them with you.
This recipe is based on a combination of two I found in my favourite baking books. Cupcakes From the Primrose Bakery is full of brilliant ideas for cupcakes flavours and the photographs are mouthwatering. How To Be A Domestic Goddess is my go to book for everything from scones to pies to pizza basses because all the recipes are basically foolproof.
Primrose Bakery suggest using the more traditional creaming method without the sour cream. Their recipe has more than twice as much chocolate and recommends topping with chocolate butter cream and nuts but I thought that was a bit too much chocolate as I wanted the muffins for Sunday breakfast.
