Bacon, Mushroom and Parmesan Omelette

Serves 2 Quick and easy light lunch or brunch idea.

Prep Time 10 min Cook Time 15 min Total Time 25 min Ingredients

Knob of butter 1 Onion ,finely chopped 3 rashes Bacon, chopped Handful of close capped Mushrooms, thinly sliced 6 eggs 100 g Fresh Paremsan, grated Salt and pepper to taste


Heat butter in a frying pan Add onions, bacon and mushrooms and cook for 5 mins Beat eggs and season then add to the pan Scatter over 3/4 of the Parmesan, putting the last 1/4 to one side. Cook until omelette has set. Finish off top side under grill Cut in half and serve with fresh salad Sprinkle over remaining Paremsan


You can use cheddar if no Parmesan.
