This salad has quickly become a family favourite, and with asparagus in season right now, it’s the perfect choice…
These ingredients are a match made in heaven – the peppery quality of the parsley mixes so well with the freshness of the lemon; and the asparagus and baby plum tomatoes taste so yummy. Orzo is such a lovely light pasta, it’s the perfect choice. Oh, and don’t forget the grated Parmigiano Reggiano – delicious.
ASPARAGUS & ORZO SALAD WITH LEMON & TOMATO
350 grams orzo 1 bunch fresh asparagus, cut into 3 cm pieces 100g baby plum tomatoes halved 1 lemon zested and juiced 4 tbsp extra virgin olive oil 1/2 clove garlic minced or grated 2 Tbsp fresh parsley finely chopped Salt and freshly ground black pepper Grated Parmigiano Reggiano
