Lemon Curd Polenta Cupcakes

I admit it. There has been a packet of polenta sitting in my cupboard for ages. It looks at me going “I know you want to use me but I also know you don’t know how”. I’ve seen lots of recipes for lemon cake using polenta but they also seemed to be very high in oil and involved steeping things in other ‘stuff’. I don’t have time to do that – if I’m baking with the children waiting around is not an option.
