Ingredients

 

For the stew: 3 tbsp olive oil 800g chuck beef steak, trimmed and cut into 5cm (2in) cubes 3 onions, thinly sliced 1 tsp chopped fresh thyme 2 tbsp plain flour 500ml can Guinness or stout 300ml beef stock 4 carrots, sliced on the diagonal 1 tsp light brown sugar 1 tbsp red wine vinegar For the parsley dumplings: 175g self-raising flour 3 tbsp finely chopped fresh parsley 2 tbsp snipped fresh chives 75g beef shredded suet Sea salt and freshly ground black pepper

Now the weather's chillier I was looking for a one-pot slow-cooked dinner and I thought Nigel Slater might have just the thing. And he did. There wasn't frost on the ground on the day I cooked this, but we were heading off for fireworks so it was great to have this cooking away in the oven for our return.

The book I've used this week is Nigel Slater's Tender Volume 1 - it's another book I don't use enough and it's chapters are split by vegetable. As well as an intro for each subject title - this one was in onions - there's advice on how to grow onions and which varieties to grow and how an onion behaves and mixes in the kitchen too, as well as the recipes.

Pot au feu (classic French stew)

Pot au feu (pot on the fire) is a classic French dish, eaten by families from all over France, both rich and poor. It is incredibly popular in autumn and winter as the ingredients are all in season, it is also a warming stew and soup that is easy and cheap to make but healthy too, the only downside is that it is time-consuming to make (about an hour if you have a pressure cooker, longer if you don't).

Slow Cooked Mexican Beef Stew with Lime and Coriander Rice

Beef stew in the slow cooker is one of my favourite easy homemade meals.  I have to admit though, that I am often a little unadventurous with it.  It’s one of those meals I just throw together and know it’s going to be good with little work needed in the evening.   Always a bonus.

I really would like to be more adventurous with my slow cooker and even make some cakes in it one day.  One day…

Maybe I just need some encouragement.

5:2 Diet: Chicken and White Bean Stew

Although we are no longer doing the 5:2 diet I recently made this stew from the BBC Good Food Magazinenofollow and think that it would make a perfect evening meal option. It is healthy, cheap, filling and only 291 calories per serving, (without the bread). It was also really simple to make and even the toddler liked it, despite the vegetables! For this recipe you will need: 2 tbsp sunflower oil 400g boneless, skinless chicken thighs, trimmed and cut into chunks 1 onion, finely chopped 3 carrots, finely chopped 3 celery sticks, finely chopped 2 thyme sprigs or ½ tsp dried thyme 1 bay leaf, fresh or dried 600ml vegetable or chicken stock 2 x 400g cans haricot beans, drained chopped parsley, to serve

Beef, Marmalade, and Cider Stew

With the long autumn night’s drawing in and a cool nip in the air, our evening meals have been a little more substantial lately. I am a massive fan of my Crockpot and I’m always on the lookout for new recipes, so when I saw Grandma’s Special Recipes on Slow Cooking I couldn’t help but purchase a copy!

It’s a lovely looking book with some great winter warmers in it, so yesterday I thought I would give the Beef casserole with orange and cider a go… Now I have to admit I did change the recipe quite a bit to my taste, hence this post. However, it was such a tasty dinner that I couldn’t help but share it with my lovely readers…
